Chocolate Peanut Banana Bites

  • 1 banana
  • 2-3 tbsp peanut butter
  • 3 tbsp salted peanuts
  • 100 g dark chocolate
  • 1 tsp coconut oil


  • Cut banana in 1-inch thick slices and spread out on a large plate or flat pan
  • Put a small amount of peanut butter and some peanuts on top, place in the freezer for 10 minutes
  • Cut the chocolate into small pieces, and melt by either using a microwave* or in a water bath (see below)
  • Add coconut oil to the melted chocolate, mix together
  • Using fork or a stick, dip each banana piece to cover it with chocolate and carefully put them on the parchment paper
  • Place in the freezer to set for about 30 minutes


Water Bath: Place a wide skillet or pot with about 1-2 inches of water on the stove. Place your chopped chocolate in a heatproof bowl (stainless steel or tempered glass), and set the bowl directly in the water. Bring the water to a simmer, then turn off the heat and let the chocolate sit until it is melted, stirring frequently.
*If you are using a microwave, check the chocolate every 10-15 seconds, mix and put back in the microwave.  
Store in the fridge for up to 2 weeks, or in the freezer for up to 3 months.
