A delicious main or a hearty side dish.

T his barley risotto features fabulously nutty pearl barley, cooked up risotto style with mushrooms, garlic and Parmesan. Pair it with the rosemary balsamic chicken included below or your own choice of protein, such as tempeh or shrimp. This recipe won't disappoint.

For the Chicken:

  • 2 chicken breasts boneless, skinless
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves minced
  • 1 tbsp maple syrup
  • 1 tsp dried rosemary
  • 1/2 tsp salt

For the Risotto:

  • 2 tbsp olive oil
  • 1/2 large yellow onion finely diced
  • 3 garlic cloves minced
  • 1/2 lb cremini mushrooms dried
  • 1 tsp rosemary dried
  • 1 cup pearl barley
  • 1 1/2 tbsp balsamic vinegar
  • 3 cups chicken broth
  • 1/4 cup parmesan cheese grated (plus more for garnish)
  • chives for garnish (optional)
